My daughters wedding is coming up next weekend and I want to make sure I have plenty. This is what I have planned for 175 people.
108 lbs of Wagyu brisket (raw #)
54 lbs of pork butts (raw #)
Then I am purchasing 150 pieces (mixed) of broasted chicken.
What do you think?

Good advice here. Cater to the kids with low cost kid-friendly food to conserve the good stuff for the adults.

Yield: (less than 50% on brisket and about 50% on pork in my experience)
Brisket = 48
Pork = 27
=1200 ounces of meat / 175 (assuming zero kids) = 6.9 ounces per person

I'd say you're good to go with heavy sides and likely have plenty of leftovers if you also cater to the kids.

Is brisket "king" in your neck of the woods? If so then you numbers look good. In my area, pork is #1 so I'd be at 100lbs of raw pork, 72lbs of raw brisket, and 150-160pc chicken. I'd have leftovers with that.

King might be a understatement.
Thanks for the help đź‘Ť
