I bet this has been discussed a bunch on this site, but I am such a new BBQ guy that I just need some help.

I want to cook a turkey in the pit for Thanksgiving. Please tell me how to do it, or at least point me toward the appropriate threads, Thanks.

Oh yeah, how about ham too?
 
You're almost as bad as the department stores..........

I know it's early but I want to practice a little before I debut. Planning ahead should increase the odds of a success I think.

By the way, do you or anyone else recommend those remote temperature probes? If so, which ones are good?
