Is uncovered poultry in the frige over night bad?

Not all bacteria is bad for you.

Mostly, our guts contain a balance of bacteria that is better for you and some that are worse for you.

The worst thing you can do is ensure that your digestive tract gets zero bacteria.

Modern humans believe they know better than mother nature when it comes to bacteria because they have separated themselves from their natural environment.

Modern refrigeration hasn't been around all that long.

Butchered poultry stored in dark places and exposed to air has been around for thousands of years.

We need to trust that our biologies can handle it.

We all have our own opinions on matters and some of us have many years of experience as a basis on which our opinions were derived.

Thank you for expressing your opinion on this, but we don't all agree. That is why this forum is as great as it is...many methods to share and try. Then learn what works best individually.
 
Well, I am not a entomologist, nor do I play one on TV. However my untrained opinion on rinsing poultry in the sink is this:

Rinsing a chicken in the sink might cause a splash or two (or more) on to the area that surrounds the sink and probably the place that you are about to prepare your chicken on. So you may want to wash your prep area after you put chicken on it.

Think about it! Your chicken is touching everything that you are touching.
If you can handle a chicken and cook it without getting sick, then it is my "theory" that rinsing a chicken in the sink is relatively safe as well.
Just do not lick the sink or the surrounding area. Also you may want to wash the area as well as your hands, "repeatedly" while preparing any type of food.

This is my scientific interpretation of this conundrum and should not be taken as an endorsement to lick your countertop.
 
hiya all, its not just a US thing, we are getting the tv ad's over here, dont rinse etc.
i have rinsed poultry for over 40 yrs and i dont think it's killed me yet.

it's quite simple really, keep your work station clean and cook your chicken properly.

Just make sure the chicken is dead first before washing and splashing can be kept to a minimum. :wacko:

I always wash chicken and other poultry. You don't have to wash it with your sink on full blast. Just turn it down low and rinse and splashing can be avoided. As others have said, just do a quick wipe down clean up around the sink with some lysol wipes, 409, or some other cleaner that kills bacteria when you are done.

My opinion on the original question is that chicken is fine left uncovered in the fridge as long as you are careful not to touch it with your other foods.
 
On another group I belong to this question came up. I said it was OK but others said it was bad because air is bad for poultry. What opinions do you guys have?

I guess I have a different take on your question. What do you mean by is it bad for poultry? Bad as in will it be easier for bacteria to grow? Bad as in will it change the texture of the chicken? Bad as in the flavor will be different? Or bad as in something else?
 
Comparisons of the old days to present is a little reckless. Antibiotic resistant bacteria did not exist back then when penicillin was the drug of choice. Staph and MRSA come to mind.

The wide spread use off antibiotics will only continue to make things worse.

Leaving chicken open in the fridge is not harmful at all, provided the chicken doesn't physically contact things you don't want it contacting. Food borne pathogens are not airborne, so no worries.

As for rinsing, why would you rinse? I have yet to hear of any reasonable benefits to rinsing. You'd be surprised at how much fine mist is produced from a running faucet, and how far that can carry.

I don't understand why you would NOT want to rinse any meat that your get from the store. Cryovac or no, I rinse everything. How can rinsing anything be worse than not rinsing it unless your water is bad :) Not another thread.......
 
As to the OP, it was stated "overnight", I don't see that as a problem at all. Now I wouldn't store it that way myself unless I had a purpose to do it, i.e. to produce that crispy, bite through skin that everybody likes. Off hand, I cannot think of another reason to leave it uncovered, and would not make it my "usual practice".

I let mine air dry in the fridge along with some added salt to the skin for cookoffs. Helps with the texture of the skin- crispier if you like it that way.
 
Ok if you have ever seen video of chicken being processed, it goes through at least one dunk in a sea of God only knows what is in it, and how many thousands of birds were run through it. I will rinse if for no other reason except for peace of mind for whatever that is worth. I keep a bottle of diluted bleach in a spray bottle for clean up.

The only concern with it sitting uncovered in the fridge, is to make sure there are no odors from other foods like cucumbers for one, that the chicken mite absorb.

Ladies and Gentlemen, as we all know there is more than one way to skin a cat..some people rinse their chickens others dont. Some cover their chickens and others dont. I think we can all agree that Bacteria and other nasties are not good, but i think we are all mature enough to know how to handle food safely. Weather there are benefits or not on rinsing i will continue to do it because for me, it is more pleasing to not have feathers or gooey bloody gunk on my birds before i put my rubs on. There are also cooking methods we are able to try at home that would not fly in restaurants due to food regulations. So if you want to keep your food uncovered at home by all means try it! It might yield amazing results and we can then see the Pr0n!
 
Fear mongering doesn't just exist in politics it lives well in the cooking/BBQ community as well. It generally originates from a microbiologist or someone that's close to one that spreads stories of the boogie man hidden in the thin air and surrounding the food and world around you.


That being said, they aren't exactly wrong. The facts and bacteria are definitely there. The problem is that our bodies have been here elvolving the whole time right along with the microbes. Common sense and safety will take care of you like it has from day one. Dry your chicken in the fridge just as it was doing in the meat market that you bought it in and enjoy.

The problem is rinsing doesn't do anything to the bacteria on the food other than potentially spray it around in the room in a finer mist than most people would realize. Rinsing will protect you from nothing, thats what the cooking is for. So at best its worthless, at worst is potentially spreading bacteria about the kitchen.

Nothing wrong with air drying in the fridge, its great for crispy skin.
 
Guess I better get me a protective case for my tooth brush in the bathroom. Seems pissing in a commode can cause a fine mist that can fill the whole bathroom, and then some, with a fine mist that will settle on everything, better cover the soap, hair brush faucet handles, light switch, door knob. towels.

Got to wonder how mankind has made it to this point.:sad:
