there's this Jamaican jerk TD going on, so I decided to try my hand at some jerked pork country style ribs.

got my ingredients together:

took 'em for a spin in the blender with a little vinegar, and let the ribs get happy overnight in the fridge:

got the kettle going with some lump and a little mesquite and an apple branch, and put the ribs on indirect

threw some scallions and a habanero on for myself toward the end

finished up the ribs with a little direct heat

The rice and peas were better than I was expecting, and the jerk seasonings matched really well with the pig.

I'll definitely be jerking my pork again sometime :shocked: :behindsofa:
 
Love the cook, the pork looks great! And you had pigeon peas! It's taken me a long time to find out that the gungo peas my late dad always called them are also called congo peas, and now you and Stingerhook teach me another name, pigeon peas! Wonder how many other strange words he used I can translate into English. :laugh:
