I emailed Malcom Reed for his ratio, and he gave me:
1 C salt
1/2 C granulated garlic
1/4 C ground black pepper
for the basic recipe. It's worked well for me, if it's maybe a bit too salty. Next batch, I might do 3/4 C salt.
