First Smoked Thanksgiving Turkey

My FIL wanted to do a smoked turkey to go with his fried turkey in the Big Easy. So I researched it watched Aaron Franklin and Malcom Reed's videos. Read the instructions on here and Thursday morning it was time to roll the dice. I took the 15# turkey out and let the skin air dry for about 45 minutes. After this sprayed canola oil on the turkey to help the skin and hold the seasonings on. Hit the bird with some SPOG and then liberally applied Kosmos Q Dirty Bird to it. The seasoning gave the turkey great flavor. I injected the turkey with a homemade garlic butter mixture. The turkey went on the WSM and cooked between 325* and 350*. After an hour I sprayed the skin with canola oil to help the skin once more. After 4 hours it was time to wrap it up. I can not believe how good the bird came out! I only used 1 chunk of cherry wood, but next time I think I may up it to 2 chunks. My MIL told me she thought it was better than fried turkey. Thanks for looking.

Nice!
I'm only guessing.
But I'm guessing this will become "the way" to do at least one turkey.
I've been doing them like this for years.
