Spareribs on the UDS (with lots of pron)

Had an appetite for spare ribs, for a while and finally, took the opportunity to make some. Started out with 2 racks of spare ribs that we trimmed and prepared for the smoker. Dry rubbed the ribs with John Henry's Texas Pig Rub.

Got the UDS ready with reg. Kingsford and 4 chunks of Cherry wood.

Once temp. was up to 225, on went the ribs...

After 4 hours, no foil, this is what we see...

After the bend test proves the ribs were ready, they were foiled and rested in the cooler, for about 2 hours.

I haven't done Spares in a couple of years cuz I always
screwed them up. Dried out mod.
I'll have to try some on the Drum.

Nice pron and how did they taste? If I put that much rub on my ribs the wife would be b*tchin! Maybe the stuff i use is too spicy for her, don't know.

Texas Pig Rub is pretty mild and sweet, it actually tasted very good and the rub caramelized nicely, for a nice bark. We actually enjoyed these without any sauce. Very moist and juicy, bone just pulled apart clean.
 
Ribs and Texas Toast... now that's my kind of meal... simplicity rules!
