Cornish hen pie deconstructed

I made this. It is a Cornish Game hen pie deconstructed, with a yellow curry sauce, a herb infused oil and a cranberry-apple chutney sauce. There were grilled green beans marinated in a mint herb vinaigrette and sweet potato marinated in a parsley oil.

These are the Cornish Game Hens that were marinated in a parsley/mint/garlic/olive oil/rice vinegar marinade and cooked at 225F for one hour, then grilled.

These are sweet potatoes and this shot is included because I like the photo.

Some interesting ingredients encountered along the way...lemongrass, candied ginger, young ginger, chao koh coconut milk.

Oh, I got cleared by the Doc today to return to drinking a little alcohol and going to the gym. So future posts may not feature full bottles.
 
My impressions were, as I was eating it, that it is was amazing, I nailed every element of the dish. The cranberry-apple chutney that did not work with the curry sauce in the pie, absolutely perfect with the chicken and herb oil. The depth and complexity of flavors were perfect, intense across the sweet/salty/sour range of flavors, with the smoke and crust of the meat, perfect. As good as a dish can be.

Broken down into individual elements, each part of the dish was good, but, not complete. As the components blended in each bite in different amounts, the dish evolved throughout dinner.

You have to be careful with young Ginger. That kind of thing will get you arrested in a lot of states!

Have you seen old Ginger? I am sticking with young Ginger.

Gore, I did the composed plate thing, I am not sure about it. I did notice that BBQ Grail did a fussy composed dinner plate that looked terrific. Perhaps he is just a lot more fussy than I am :heh:. The chickens looked better before I sliced and composed them.
