Had some pork tenderloins and pork belly from Costco. Sliced the tenderloins lengthwise and applied lemon zest, garlic, rosemary, salt and pepper inside and out. Then wrapped the pork belly after slicing it thin.



Put it on the Joe Jr til internal temp was 145 ish. Then seared it in a cast iron skillet



Sliced and plated with some 'healthy noodle' and veggies



I would have liked the belly to have crisped up better so maybe finish it in the Jr. next time. The wife went back for seconds though so I guess it was OK :grin:
