Any suggestions on breaking this thing down? Was watching this vid...

Lots of ways to skin that cat. You can trim it to a Rack of Back ribs and a loin, or single bone loin pig pops if you French the bones, or bone on extra thick pocketed chops for stuffing, or my favorite 2 bone loin chops Brine them or dry cure then grill ID and RS finish.

Either of these are exactly what I'd do.
 
My plan originally was all chops - I really like thick chops. Think I am going to tackle this tomorrow while I have a brisket cooking.
