Christmas Dinner on my UDS
 
On Christmas Eve, I decided to break in my UDS with two slabs of baby back ribs. After two hours I finally got the temperature to stabilize and used the 2-2-1 method at 250F. Here are the results below.

I will definitely need more trial and error before the competitions begin but what better time to break it in then in below freezing weather.
