Been a while since I’ve hung
Future meals cook. 4 mi urban hike early and got to thinking it’s been a long while since hanging meat. Today I zero the count on hanging. Small ribs and small Duroc shoulder. Oklahoma Joe Bronco. Olive tree briquettes mixed with mesquite lump. A small oak split and a Kingsford giant strike stick to get it going.
It’s hanging |

One of these Days I'm gonna find a half priced Bronco Joe..........

Ribs finished about an hour ago. Stirred the coals and added a small amount of oak. The butt temped 185 so it continues on

That’s it right there. I love the versatility of that drum. It was a great purchase. Reminds me, I need to hang some meat soon

I hung ribs on my WSM 18. Wasn't impressed. Operator error no doubt.
Works great for hanging snack sticks though. |
I hung these until Thermapen slid in without resistance. Temp said 201. Removed from cooker,Wrapped tight in foil for about an hour on counter. Good ribs.
