This weekend my FIL's extended family had their Christmas Party. Of course this means a lot of cooking. Woke up at 2:45 AM to get straight and had the whole hog on by 4 AM in preparations for the evenings pig pickin'. We also threw a turkey and a Boston Butt on the grill to give the hog some company.
We cooked the hog on our propane hog cooker at 260*-270* for 9 hours. We used two different types of our Eastern Carolina sauce to finish the barbecue. Once we got the hog on and temp settled it was time to start the huge breakfast spread. We cooked 12# of thick cut bacon, 90 links of breakfast sausage, 2# of smoked sausage,~10 links of wild hog smoked sausage (not pictured, it was eaten as soon as it was cooked), and scrambled 4 dozen fresh eggs. While all this was going on we also used my WSM for some smoking (didn't get any pictures). We smoked a brisket, a pack of large beef ribs, and 2 packs of short ribs. Lots of food, family, and good times! Thanks for looking!
*Even had a texas boy help debone a hog for the first time as well as it being his first time ever having Eastern Carolina sauce...BBQ bringing different cultures together

That sounds like one heck of a party! Looks like a lot of great food was had for all! Great job on that hog!!
 
You really did an overall outstanding job on everything!! That was a tremendous undertaking and I am sure that your extended family enjoyed it.
 
I have had one SIL.I hope I never have another one.If I do I hope he is like you.Good job and good looking vittles!:thumb:
