Frozen to serve time
 
I am prepping for a friends party and so far I smoked 2 full size corn-beef's and 2 full size briskets.

Since the vacuum sealer doesn't fit the whole piece of meat, when I take it off the smoke I slice it in half longwise and vacuum package it. I then freeze all the pieces.
On the day of the party, I will be using a cooler with a sous vide unit to bring them up to 150F.


So the question, I'm trying to estimate the heat time from frozen to serve.


Each whole CB was 22lbs and brisket was about 17lbs before cooking then being split.
