Found this while perusing for Kindle bargains:
Olympia Provisions: Cured Meats and Tales from an American Charcuterie Though this isn't the 'definitive' curing guide (I think that title goes to the Michael Ruhlman book), I like it primarily because it's a good read and not just a collection of recipe after recipe. And it's a real book, not a self-made collection from someone who googled 'best sausage recipes' and copied the results into a single rambling unorganized indexless mess of an e-book. 288 pages.
