I could not believe how juicy they turned out! They are not the highest quality of meat but they tasted amazing...the pic above is before the bbq sauce was added. I have a Maverick on the way and once that arrives I will be trying a long rib/brisket smoke!!:becky:

Found some dirt cheap barrels this morning!

Problem is they can only ship freight, I called them this morning and she said she could get me 8 of them for 125 on the shipping. So, ~$205 for 8 barrels. Site says they all come with removable locking lid and they're clean. If I could find that many people to split it up with locally I'd be game but I don't think I can.

Here are some "after the fact" pics of how I drilled the vents in my UDS lid. Hopefully, it will help someone else that's lazy like me. :-P

I decided how far from the edge of the lid I wanted the holes.

Then, I cut a strip of wood to the length that would just fit inside the top of the lid at that distance from the edge.

I made two marks on the wood that centered the two holes.

Then, using the marks on the wood as a guide, I marked the location of the holes on the lid using a sharpie.

After I marked the locations I went back over them with a punch to act as a guide for the drill bit.

Using a square, I was able to move the wood at a 90 degree angle from the first marks.

I marked the second set of holes.

I repeated the process until all 4 sets of holes were marked.

Then, I drilled out the holes using a step bit.

Easy peazy and no need for an elaborate template, just a strip of wood, a tape measure, a square, and a sharpie.

Last night I fired up my second UDS and I had a bit of a problem with temps on it... but I think I know why. I used a ball valve that I had around the house. It fit the 3/4" nipples on my UDS BUT even though the threads were 3/4" the port was only 1/2". Aha! Not enough intake.

See the valve on my other UDS was full port or at least it was bigger than the hole on my other one.

So if you are having problems perhaps that might be a clue for you. Just a thought.

Has anyone experimented with different ways to baffle the intake and exhaust of the UDS?

When conditions are gusty, I have noticed that it is hard to keep the temperature constant.

Just thought I'd post a pic of two new drums in the family that we're seasoning tonight - an 85 gal. and a 30 gal. I have been making drums for buddies and selling a few, but decided to keep these for me and my son. These are a little nicer than the old one on the right in the photo - they are high-temp powder coated, have nicer temp gauges, stainless steel hardware, chrome stacks, and of course, bottle openers. :thumb:

I really like the 26 inch racks on the 85. Lots of room there. These look like they'll be a couple winners. Anyway, that's it...smoke on.

Just might try that :) they have been on the UDS for about an hour and a half now....ill ask the guys when they come over in an hour if they have a preference.....:thumb:
