Pepper Stout Beef Variations?

Just put 2 Chuckies on Fantasia - thinking Pepper Stout Beef sammichies but we don't like the Stout in Pepper Stout Beef..........what variations do yall like?
Reg Beer, Dr. Pepper, other?

I've used a porter, Mexican beer, couple friends used regular old Bud. Replaced the jalapenos with hatch, pepper with various BBQ rubs. It all comes out good.

1 cup Marsala wine, 1 cup coca cola, 2 cups beef stock, red onions, poblano's (milder then jalapeno)
 
I use regular beer. Whatever I'm drinking, probably Busch. I'm tired of bbq sauce too so I'm looking for any recipe without bbq sauce or sugar. I love black pepper so I lean toward Texas flavors.
 
Looks lovely, Smitty. I've been trying to figure out options, as my better half is gluten-free... and if the "apple beer" worked for you... may need to follow suit.

may just use my Angry Orchard Apple Beer

Also, that's called hard cider. It's wonderful, and the real reason Johnny Appleseed took his famous trip through the countryside.

Whatever it was called, several names - easily customized

Smoke chuck roast till 1/2 done
Pan it
Add beef stock chicken stock or beer or wine- your choice about 1”
Add new potatoes-onions-carrots whatever veggies y’all like
Top roast with a jar of Vlassic sour kraut
Let it continue to smoke to about 75% complete
Foil to the finish

Obviously this can be crockpot or oven adapted too
