SmokingJ's Deep Fried Mashed Potato Balls (recipe)
So I'm sure everyone will have some leftover mashed taters after Turkey day. So here I'm going to give you a recipe for something different besides making potato pancakes.
Ingredients: Crisco shortening or Crisco oil for deep frying. 1/4 cup water 2 tbsp. Crisco shortening 3/4 tsp. salt 1/8 tsp pepper 1/4 cup all purpose flour 1 egg 2 cups mashed taters cheese/hot peppers/bacon optional 1. Heat 2 to 3 inches of Crisco to 365 degrees in deep fryer or deep saucepan 2. Combine water, 2 tbsp.of shortening, salt and pepper in med. saucepan. Bring to boil and stir in flour. Cook and stir until it forms a ball. cool slightly for @ 2 minutes. 3. Beat in egg and add taters. mix well 4. Drop by rounded tbsp full a few at a time into your fryer. Fry 3-5 minutes or until golden brown. Turn as needed for even browning. 5. Remove with slotted metal spoon and drain on paper towels. serve immediately. You can add bacon or cheese or hot peppers to the mix to give yourself and guest a variety in taste. If using bacon make sure it's cooked before adding. food safety first folks. Enjoy!!! |

We've done this in a similar fashion and they're wonderful. Thanks for the reminder! We put in one more step and roll the tater balls in Panko before frying.
