Whole rack of pork ribs

Got to love a guy that posts a pic of his Q in one of his first attempts. Good job Bro. and welcome. That's a good smoker you have there, but it looks like you have a hot spot. Rotate you ribs every hour or so to reduce the charing. The hot spot on those are typically nearest the firebox. You may even want to reduce your fire too. Do you have some thermos to check temps? The one on your unit is famous for not telling the whole story.

Big Dog, thanks for the advice. I'll rotate next time. I just order a Maverick et-73 or something like that for 40 bucks at amazon.com the one on the unit looks cheap!

Good looking ribs.
If you're using the side fire box for heat, flip the charcoal pan in the smoke chamber over and use it as a heat shield. Cheap mod and works great. |

Do I put it in the spot under the grates where the heat comes out of the box to the main grill?
