pulled chuck enchilada casserole
i made a rub of ancho chile powder,white pepper,cumin,garlic,onion,cilantro,& a dash of sage,
took the chuckie to 205 over skeet then pulled for enchilada casserole. in the pit w/ ribs http://i178.photobucket.com/albums/w...meefood008.jpg sliced before pulling. http://i178.photobucket.com/albums/w...enchies001.jpg pulled chuck over the 1st layer of tortillas http://i178.photobucket.com/albums/w...enchies008.jpg then add another layer of tortillas(warm oiled corn),enchilada sauce,top w/ cheese & onion & melt the cheese. then Ta Da-w/ all the fixin'z. http://i178.photobucket.com/albums/w...enchies001.jpg move this under beef if needed |
