Pulled Pork Storage
I've got !30 lbs. of butt in cooler resting after an all-nighter right now. Plan on pulling in a couple of hours. My question is, would it be ok to keep in frig until thursday for the event or should I freeze it ? I would loved to have had it ready that day, but my paying job got in the way. I've pre-cooked before, but not for this length of time. Any suggestions would be appreciated. I hope your Sunday involves smoke and football.

Freeze it for sure, that's too long in the fridge.

I THINK you'll be OK if you keep them in the fridge, but I KNOW you'll be good if you freeze them. Therefore, I'd probably freeze em tonight and pull em out in the morning to start the thawing process (can take a couple days to thaw a unshredded butt).

Vac and freeze. I have froze pulled pork for over 5 months. Still great after 5 months!
