Got my UDS built and had its inaugural run yesterday. Smoked an 8# Boston Butt, turned out killer. Had 8 people over and it was gone in about 5 minutes. I can't wait for my next smoke.

So, how much meat are you guys getting on your UDS at once? Can you cook on the lower grate too? If so, I'm thinking 6 butts are doable.

Most i've tried was 8 slabs of ribs, 4 on the uppper grate and 4 on the lower. worked perfect, only think I had to do was to rotate the grates about half way through, becuase the lower is a little bit hotter.

but worked like a charm

I have seen them advertising around here on Craigslist - when you get it, can you give us a review as inquiring minds would like to know about the craftsmanship and its versatility.

First UDS Build
 
I'm over halfway through this monster thread and about half done with my build. Got a closed top drum, cut the head, drilled intake holes, burned barrel, cleaned barrel, drilled grate holes, bought cheapo walmart kettle for lid and grate.

Next I'll sand and paint, attach lid and season :clap2:

THANK YOU to a ton of folks here for all the work to develop this system and generously offer your experiences for newbies like me.

I will post pics but the cell phone card isn't cooperating right now :doh:
