Chx Bomb & Pepper Stout Beef Weekend 130914
 
Been wanting to try Pepper Stout Beef so this was the weekend to do it, along with trying Chx Bombs again. Went to Costco on Saturday to get the Chuck Roast and it was a beast ~23.5 lbs. After my purchase all I could think was I better like this recipe. On to the pics.

Saturday Chx Bombs with bell peppers, my rub, 4 blend cheese, cream cheese wrapped in meat candy.

Too much smoke and I tried to crisp the bacon over the coals and got a burn.

Next time I will keep the temp at 275 for the first 45 min then up it to 325-350 to crisp the bacon and less smoke wood.

Sunday PSB 23.5lbs broke it down into 2x ~5 lb pieces for the PSB and the rest in the freezer for next time.

After 4.5 hrs in the smoker IT was only 160, 1.5 hrs behind so foiled at this time.

2.5 hrs at 350 and it shredded easily, like a fork in spaghetti.

Everyone liked it, the leftovers I brought to work were a hit. Two people invited themselves to have some. Next time I will use ciabatta buns like I did at work.

Tasty looking bombs. Not burned......they're xtra crispy. Nice job on the Pepper Stout. One of my favorites.

looks good...was gonna say that looked like wayyyy too much Hickory for a chicken cook, but glad you liked it.

Planning on trying Pepper stout again in the near future. First attempt was good but I want to tweak and tighten the recipe.

Thanks everyone, we had a great weekend.

My helpers will be 5 on Thursday and when I asked what they wanted to smoke on Sunday they said "Daddy..... Sunday is for football and moke pig ribs" meaning baby backs. They helped me make my rub a couple of weeks ago and we have a system prepping the ribs. One coats with honey, the other sprinkles the rub and we all pat to finish. Then they show mommy, she gives it her blessing (to get to her heart it's definitely through her stomach) then daddy puts them on te UDS. Finally they remind me " if you lookin you not cookin".

I love Sundays.
