Blackened Chicken Torta
I had one of these recently at a restaurant (The Yard House) and tried to duplicate them here. First I searched the web for a Blackened Chicken rub recipe. I found this one on foodnetwork by Jeff Mauro.
6 chicken breasts 1 cup butter 1 1⁄2 tablespoons paprika 1 teaspoon salt 1 1⁄2 teaspoons onion powder 1 1⁄2 teaspoons garlic powder 1 1⁄2 teaspoons cayenne pepper 1⁄2 teaspoon white pepper 1⁄2 teaspoon black pepper 1⁄2 teaspoon thyme 1⁄2 teaspoon oregano 1. Coat both sides of thawed chicken with butter. Reserve. 2. Combine all seasonings in a shallow bowl. 3. Coat both sides of chicken. 4. Heat a heavy duty skillet until very hot, about 10 minutes. 5. Add butter to grease the bottom. 6. Sauté chicken over high heat for 5-7 minutes on each side. Here is the rub ready to go. https://farm2.staticflickr.com/1483/...b88d57a6_z.jpg I pounded some chicken breasts out to around 1/2” thick. https://farm2.staticflickr.com/1617/...38b073ed_z.jpg https://farm2.staticflickr.com/1594/...4353dbf0_z.jpg I placed my CI skillet on the kamado in the lower position and let it get smoking hot and blackened the chicken. https://farm2.staticflickr.com/1563/...e1b552cb_z.jpg https://farm2.staticflickr.com/1681/...718a9798_z.jpg I then toasted the torta roll. https://farm2.staticflickr.com/1693/...22436b68_z.jpg Spread on some mayo, https://farm2.staticflickr.com/1648/...2fd62437_z.jpg some American Swiss cheese slices, a chicken breast https://farm2.staticflickr.com/1602/...824dcb92_z.jpg and some pickled red onion. https://farm2.staticflickr.com/1638/...4142efe4_z.jpg Then some avocado, https://farm2.staticflickr.com/1617/...e2c51ec1_z.jpg lettuce, https://farm2.staticflickr.com/1512/...a1ed253a_z.jpg and tomato slice. https://farm2.staticflickr.com/1521/...8db17159_z.jpg Here are the Plated shots with a Modern Times Lomaland Belgian-style ale. https://farm2.staticflickr.com/1584/...331ca142_b.jpg https://farm2.staticflickr.com/1463/...b267d48b_b.jpg Delicious. :becky: |
