Does anyone have any sugestions or recipes for rabbit stew, soup, or anything that is good?.

I'm not sure if it is still a bouillabaisse if you add rabbit, but this is my vote. Brown rabbit, braise with fennel, add clams and mussels close to the end of the cook.

Try it once and I will replace your rabbit if you don't like it. I live in rabbit country (Pel-Freeze).

My mom cooked it this way when we were kids many times.

Soak in some salt water, season with salt and pepper, cook in cast iron skillet with some cream of mushroom soup until done.

I say check out conejo escabechado (i think it translates to marinated rabbit, but have seen it called picked rabbit too). You can find plenty of recipes out there for it. One thing that I have seen is that most recipes do not call for juniper. I think it is a key ingredient, IMHO.

Might be worth checking out. Maybe a Brethren has a recipe?

Just found out one of our Church members is bringing me a rabbit on Sunday. This looks great (below). Any more instructions you can add? Temps, etc.

Also, other grilled or smoked rabbit recipes. I've only had it in stew when I was a boy and would like to do it well.

I cube them and fry in a little oil, then seasoning salt. They don't last long.
