View Full Version : How long do rubs stay fresh?

I'm thinking of purchasing my favorite rubs in 5lb jars. This should last me a whole year. Will the rub be as effective 6 months or more down the line? Or will it lose it's freshness?

I hate to admit it, but as far as I'm concerned, my rubs and spices are good until the jar is empty....

It depends what's in the rub.
Stuff like salt and sugar can last a long, long time but the oils in spices like black pepper, cumin and all spice give up the ghost much faster.
That's the reason why good black pepper is always freshly ground.

McCormick's dating for the ground spices is way to long.

If you do go with the 5 lb size keep it in a bag inside a tightly capped jar in a cool place, out of sunlight and away from any moisture.

Some people will freeze their spices to keep them fresh but you need a real clean, odor free freezer to do that. After six months in a ordinary open and shut everyday freezer, your spices will pick up undesirable odors.

When I buy rubs in bulk I vacuum seal them in smaller portion size bags and throw them in the freezer. They seem to stay fresh this way.

The only reason why I'm buying the 5lb jug is because it's cheaper in the long run. However I do not want to compromise taste either. It's a superb rub, just want it to stay that way throughout. :thumb:

I keep mine in a zip lock bag in the freezer. Not sure if that makes them last longer but it was my theory...

I make small batches and put them in mason(jam) jars. Seems to hold better than the container or bags it comes with.

I buy often from an organic/health food/hippie store. It's fresh, cheap and something about their herbs reminds me of the 60's.:cop:
