Here's a typical Dutch for you guys.
This one should've entered the Apple ThrowDown as well,unPhortunatly I was too late with this idea.

Hacher is French for "chopping".
It's made out of beePh that has to cook for a while till it's like butter....like stew I think.

Last week I managed to solve my air leake problem on the Midi UDS by using high temp silicone,that is what you see in the Phirst pic.
It was Phun cooking on that little one again!:cool:

Hachee marinade:

-Lawry's seasoned salt
-red wine
-lime juice
-apple cider vinigar
-bit of Sishado BBQ marinade
-garlic paste
-crushed juniper berries
-balsamico
-olive oil
-salt
-pepper
-crushed kruidnoten (typical Dutch sweet treat,mostly eaten during Sinterklaas period)


Rest of hachee ingredients in the pan:

-lots of onion
-more garlic
-butter
-flower
-Maggi cube
-red wine
-water
-bayleave
-cloves
-more crushed kruidnoten
-78% cacao chocolate
-sugar
-salt
-pepper


Ingredients for the red cabbage:

-Braeburn apples
-Loonse stroop (Loonse syrup,apple based)
-onion
-butter
-garlic
-apple cider vinigar
-crushed kruidnoten
-crushed juniper berries
-bayleave
-cloves
-red wine
-cinnamon
-cane sugar
-salt
-pepper

It took about 5 hours smoking n cooking.

I was expecting for you to comment on that one Gore!:cool:
I've did a bit of research and discovered that some people use speculaas or ontbijtkoek...they use it to thicken the sauce up but also for the taste of cardamom what's in those products.
I got the idea from a Dutch Brethren recently and I wanted to give it a try since it's Sinterklaas time now.:wink:
The kruidnoten gave an extra dimension in the hacher next to the chocolate.

I bet it did! When I looked at those beautiful steaks, I could only think, "Oh no, he's going to Dutchify them!" They look so good, but your final plate looks fabulous, especially in cold weather.

Saturday I also got some nice bright orange candles from Padawan with a SS tray.
I think that tray is going to be used for my Mini UDS. :becky:

Hgehge:thumb:...within a second I brought a tape measurer and the unfinished charcoal basket to the table.
She don't mind that I'll use it for the Mini UDS,she had that tray sitting doing nothing and she knows what value this tray has for me. :wink:
