We're having a potluck at work today. Instead of going with typical store bought pies or deli trays, my friend and I decided to smoke a fresh 12lb turkey. We brined it for 24 hours, then rubbed it down with Yardbird, got to work a little early, fired up the UDS and let it do it's thing at about 325*.

We ended up getting called into a really long meeting right around the time we should have been pulling it off, so it was on there about 30 minutes longer than we would have liked it to be. Thankfully the breast isn't too dry, but the skin blackened up more than we would have liked. It's currently resting and will be carved in about an hour.

Another guy at here knew we would be doing the turkey so he brought in a 2.5lb chuck roast to throw on there.
