What we have here is your basic el-cheapo cut of brisket from Rancher's Reserve...(hey...it was free...)...trimmed close...point on...

Mixed 3/4 cup Beef Injection to 2 cups plain old cold tap water...(my choice for now just to see how the base flavor tastes)...it mixed very well...a couple of minutes with a whisk and smooth as silk. :thumb: The injection thickened a bit as well...cool. :cool: Anyhoo...started stickin' to the meat in a one inch grid...dusted it up with some Cow Cover...wrapped it in plastic wrap...and back in the fridge for a few hours before firing up the BGE...

I've used the beef injection in a contest and took 7th out of 53. I haven't got the hang of a good presentation yet...but working on it. I also didn't know about trimming the brisket BEFORE you cook it in a comp. I've never used the beef rub though.

I've cooked many a first place brisket this year using Butcher / Plowboy products...so far I'm liking what I'm seeing and tasting with Kosmo's...:thumb:

So it's going on BGE at 2:30pm and is that like a 4 lb'er?

More like an 8 lb'er after trimming...

Fired up the BGE with Wicked Good "Weekend Warrior" and 2 big chunks of red oak...foiled the platesetter and edges of the cooking grate so as not to burn the ends of the briskie...stuck a probe in the flat and set it to yell at me when it hits 160...

I let it go a little deeper in to the smoke to get the color I was looking for...ended up foiling @ 170ish...she plumped up real nice...gonna be a juicy one...:cool:

Back on the BGE until I like the way the probe slides in the flat...maybe and hour...maybe more...it'll be done when it's done! :becky:

Wait no more brother smoker...here we go...

1st of all...this smoke was all about flavor profiling...and according to my wife aka "tastebud"...the flavor was outstanding. Very hard to compare with Butcher/Plowboy fairly without a side by side but comparable to.

2nd...this was a lousy cut of meat...very little fat content...and I cooked it hot and fast...not a good thing for inferior meat...BUT...the injection produced a moist tender product in spite of my attempt to over cook it (unintentionally of course).

3rd...conclusion...great combo...the injection plus the rub...good beef flavor...not overpowering...no funky aftertastes...very clean. I'll definitely be using it again in the very near future. :-P

Who says you can't get a smoke ring on a BGE...

It definitely helped I'm sure...I probably farked it up a bit from the git-go by letting my temp creep up a bit too high...no worries...it's just cookin' meat! :thumb: The flat end opposite the point was a bit dry but middle in was moist and tender. :-P

I didn't marinade it as long as I should have (only 4 hours) or it probably would have been more moist...also I didn't rest it in the cooler as planned...just on the counter top under a towel for 15 minutes before slicing...it was getting late and we were hungry! :becky:
