I have never done beef ribs before and all my butcher had was individual short ribs. I bought 2 lbs which was four ribs. Sprinkled with Bovine Bold.

Smoked at 240 for 3 hours

Then I foiled them with parkay, worcheshire and soy sauce. Let go another hour. Probably should have went two. I pulled and they were moist and tasted good. Next time I will go 2 hours foil and 30 min to set with some sauce. The rib meat was tender and tasty.

You got me craving short ribs; haven't done those in a while.

Soy and Worcestershire sounds like an interesting combo. Gotta try that. :thumb:

They take a bit to get done, but, they are incredible eating.

I do mine around 300 indirect, for an hour and a half, than into a pan of pre-boiled and hot rootbeer, let them cook in there for another hour or so at 300, out of the pan, back on the grill indirect, hit with either bovine bold or some wow up your cow, followed by a little head country, good eats! but yours look great!

The pullback looks pretty good, and that sliced shot looks tender and juicy, but those ribs are tricky and I've seen them just like that before and wished I had them cooked a bit longer. All these beef rib posts lately are making me wish I had some in my freezer. It's not a good time right now for me to get some though, so I'll have to endure a few more weeks before getting a beef rib fix.

Short ribs are great. I've braised them on the smoker before. Seared them quickly on the weber kettle and then put in a cast iron dutch oven on smoker at 250 for a few hours. Use a braising liquid of dark beer, onions, garlic, carrots etc. Just leave the top off the dutch oven and you get a nice smokey flavor into the ribs and braising liquid.

Beautiful! I haven't done short ribs on the smoker yet, and it's been years since I last braised any. Thanks for the reminder!

Great looking ribs! The timing on short ribs is tricky, sort of like brisket, they're done when they're done. I've started probing with a toothpick through the foil to get a feel.
