View Full Version : 4.75 lb honeysuckle turkey breast, frozen

Well, it must be the cooler weather that finally hit today. I'm looking to do some turkey this weekend along with some spare ribs. I've done a couple of whole turkeys before with success but went to look for some breasts at Sam's and all I found was a 4.75 boneless breast glob in the frozen section.


My main questions: 1) is it feasible to thaw and cut the 4.75 lber into breast size chunks and individually brine, marinate, and smoke for a normal boob time, then freeze the indivual pieces? 2)Or, do the whole thing and freeze the rest. I've only got about 6 hrs of smokable time.

Appreciate the input.

I would do the whole thing.

As far as the brine question, not sure. I never brine, but I also notice that the turkey boobs are usually already packed in an x% solution, which is a brine in and of itself.

As anyone tried to cut the raw meat into breast size pieces and then smoke like normal?

If you "steak" a small breast like this you'll wind up with jerky! Cook the whole thing in one piece.

Just my opinion - your mileage will vary! :D

Looks like I'll do the whole thing. Just though if I did them like chicken boobs it might impart a little more flavor.

By the way, since this is all breast meat, how long would you smoke it? I guess just take it up to about 160*, any idea how long a 4.75 lb boob will take?

I do a turkey breast every year at Thanksgiving and, although mine aren't frozen when I throw 'em on, I smoke them for 1 1/4 - 1 1/2 hours per pound. And I take them right out of the plastic with no extra brining. They come out perfect every year. Maybe I'll bring you some leftovers! :)
