View Full Version : Pork Butt Cook Question...

I've got a small 4.8 lbs pork shoulder. Dinner is supposed to be at around 4:30 pm, Sunday. I'm wondering if I should do an overnight low smoke on it or if I will be OK putting it on at 6am Sunday. I'm thinking 2 hours smoke, then 225 till internal of 200. Think it will be done in time to pull at 4:30pm?

10hrs should be more than enough for a small butt like that.

I think you will be okay. I would monitor the meat temp, at 165º (It could stall (stop increasing in temp) at 155º to get to -165º for awhile.) I would then wrap in foil (@ 165º) with a good spray of apple juice and cook until 200º. At that point the best thing is to rest in a dry cooler, wrap the foiled butt in old towels before putting into the cooler. This is the resting period, and will help the meat finish out and be very good. If done early you can rest the meat for at least 4 hours with no issues.

Just another opinion: I like 1hr and 45mins per pound at 225degrees.
Yes it may get stuck for awhile. To get it moving - IF you NEED to - wrap in foil on the heat. If not, let it go....low and slow AND MOIST! A luscious pork butt deserves to be moist. Don't hesitate to wrap and hold it for even a few hours. Keep temp up the best you can but over 140degrees at all times. End temp? USDA will tell you a minimum of 160degrees. That's fine but that's tough, too. 190-plus! Then enjoy. As that old Seattle rapper, SIR-MIX-A-Helluva-LOT, used to say, "I like pork butts and I cannot lie!" or something like that!

Great advice from everyone that posted. We prefer cooking pork a bit slower and dont cook hot and fast.

Your pork will be fine to rest for a few hours so shoot for finishing earlier rather than on time.

Smoke from 6:00 till 1:00 Doulbe foil it and put back on till 3:00.

Error on the side of overdone with a pork butt.
