Got to temp but not having cooked on a stick burner and using lump charcoal I have to learn when to add. Noted if you wait till temp starts dropping by the time you get it going it drops below 200 then up again. More cooks, more beer. :thumb: Little warmer on left but can tune when I get control. Flavor is a lot different than a UDS.

Shhh... Big Brother Smoke and Kick Ass are listening. Gotta say I like it. Of course this is the first cook and not splits. Can only describe it as a real campfire type taste. While cooking did not miss the signature K smell.
Time will tell. Gotta locate this OC wood place Country is always bragging about. Got a cook next week for 150 +.

Hey Stef noticed in your photos you cook butts in a alum pan. Do you always do that? If so why? Do you know where Country gets his wood? (Not the kind he gets at the Blue Oyster).

I need to get some more wood so I have been calling around. Wood Shed seems to have a heck of a selection....pricey but I hear its great quality. PM me if you want any numbers of some local spots. Pit looks great!

I agree! I'm jealous!

When you said the food tastes a little different, is that because your new smoker tastes different or the UDS tastes different than traditional smokers (since the UDS has the drippings hit the fire)?

Thanks for all the comments. Need to paint front wire shelf as I had to cut it around the gas regulator but it is freakin raining.

Been thinning the herd. Just another project/challenge on the list. I started collecting parts, tank, trailer, firebox, raw steel. Busy at work (luckily) so i had no time to fab up myself so rather than admit defeat and listen to wife I got Ruben to work up the major part and now I am Norcoizing it. As far as selling Q I work too much for now but figure I can continue to collect descent equipment, watch others and learn and if work gets cut have it as an option. Have a teenage daughter and trying to coax her to start party catering with a couple of her friends. She could line up parties I cook, her and her friends serve and clean up and give them extra spending money. Kinda hard for kids to get jobs as adults are taking them to make ends meet.

I have been buying firewood at the wood shed. I probably don't buy near the amount country does, but have not had any problems yet. Good firewood. A bit pricey, but you have to pay a little more son tines to get good food.

went to Cal-Char today partly because they open up early and on the way home. Bought 40# sacks of oak splits for $12 and a sack of mesquite lump for $12 also. Not sure if it was expensive but I got it. Guy says they sell a pallet of @ 30 sacks for $250. Any opinions?

Sounds a like alot when you figure how many pallets it will take to make a cord. A cord of oak (128 cu. ft. or a stack 4'X4'X8') around here goes for 250-300 bucks. Try CL when your ready to stock up, you might get a deal on some green wood that you can season.

Pat that sounds like a great deal to me. The woodshed in Orange sells gunny sacks of oak chunks for $25 plus tax. I think they are about 40# as well...

Meant to say that In the stick burner, I cook butts in the pan. It cuts down on grease and clean up and keeps stuff nice and moist.
