View Full Version : Tri-Tip French Dip & Homemade Crispy Fries

The craving hit yesterday morning...must...have...french dip on fresh baked roll...with crispy fries...and homemade au jus.

So that's what the missus and I got to work on last night. She picked up a baguette on the way home that was about 1/2 hour out of the oven so we could pile the meaty tri-tip goodness on. The tri-tip I cooked over oak.

This had to be one of the best beef dips I've had, especially after anointing each bite with the delicious, hot au jus. The fries were super crispy yet tender on the outside.

Sorry no pics of the cook this time, but here's a pic of the finished product:

You are killin' me that all looks great. I'm doing 2 TT tonight hoping to have leftovers so I can try this tomorrow.

We didn't have any sherry, so left this out. It was still very good. BTW, this is a Rachel Ray recipe...

Au Jus


2 tablespoons butter
1 shallot, chopped
1 tablespoon all-purpose flour
1 jigger dry sherry, optional
2 cans beef consomme, or beef broth

Directions

In a large, shallow skillet over moderate heat, melt butter. Add shallots to butter and saute 2 minutes. Add flour to butter and shallot and cook a minute longer. Whisk in sherry and cook liquid out. Whisk in consomme in a slow stream. Bring sauce to a bubble and allow to simmer over low heat until ready to serve sandwiches.

Deep fryer is on the fritz, so we just used a large cast iron skillet. Worked out great...the missus par-fried them first, then just before serving, fried them a second time.
