lookin for cookin temps on Venison, i came across this temp chart (http://www.deejayssmokepit.net/Downloads_files/Time-Temperature.pdf) from deejays smoke pit pretty cool glad to pass it on!

but a buddy of mine at work know's my BBQ, so he thought he's lemme try cookin up one of ... well two of his last years hind leg roasts, probably only about... 1.5...2 lbs... i dunno maybe even 3...pounds... so i decided to cook it kinda like i think (never done one yet) tri tip is done, hot right over the coals each side for about.... 3-5 min to give it a nice sear, and im gonna take it up to 165 or so off of direct heat, here some pics of the event,

oh and notice the thermo i popped in 'im last weekend, it's nice knowin what temp im runnin for a ballpark at least

and the rub was...well is some bovine bold with an extra layer of course pepper, and i also injected with some applejuice/ canola oil, pepper, lilbitta salt and chipotle...(ch-po-tLAY) <<<<DIVA Q :heh: :heh: :heh:

i hope so, i foiled at 160 to take to 170 it's out and resting, and im sure the temp is gonna go even higher.... but we'll try it anyways, i gotta backup one if this one doesnt turn out, ya see there are some boys at work who think that Mule deer out here in AZ is junk... they are whitetail boys see.... and if it's not whitetail... it's not a deer.... we're tryin to prove em wrong and not tell them what it is, everybody at work loves the BBQ i cook that's all i'll tell em it's BBQ

LAY..... any ways it came out great!!! I sliced it thin like brisket against grain and being deer not beef not fall apart tender but not tough and best of all for me....... Not dry I probably had a few oz of juice from lettin it rest in the foil and the meat still was flowin when I cut it up
