I had the best weekend EVER... and you will see why!

Most of you know that I have trouble getting true American cuts of meat. I was getting pretty sh!tty with this, so I decided to take things into my own hands. I went to my meatatarium that had "Port Shoulder Roast" for 4.99 a Kilo.... they were all little chunks of about 2 pounds at the most. I went to the counter and sked them for a whole one...:shocked: and that was the look the guy gave me... YES, a whole one please... the whole thing. DO you have one?

He went out the back and came back with the whole front third of a pig, undivided!:thumb:

I say... yep... that's it, just cut it in half thanks.:cool:

Well, they were pretty cool, and they won't forget me now. I pretty sure anytime I walk in there, they will be ready.

So, in getting the whole shoulder, I then had to cut it up. I went on You Tube and watched a few tutorials... then got cracking.

I boned out the ribs and spine.

Took off the hock:

Cut it down the middle to seperate the butt from the Picnic:

Then I boned out the blade from the butt

The picnic, was cut up for sausages: I decided to make Italian Sausages because it is nearly impossible to get them here... I mean, GOOD Italian Sausages....

And this is my maiden attempt at sausages by the way... FIRST TIME EVER, and this is my new sausage maker attachment which I got for my birthday in February!

It was quite late by the time I got this far, so I popped 2 Snags on the CI Pan. I'll grill them on the BBQ next time...

The next day I had another 2 kilos of prok shoulder remaining in the fridge. Highly encouraged, I decided to make some fresh Chorizo, but modified the recipe I got off the Northwest web site!

Man, I had so much fun doing this. It was harder than I thought, but the results were well worth it....

MAN those CHorizo's were farkin' HOT!

Sausage I love it. Those chorizos look real good, mix them with peppers and onions some cheese and pasta.... super good

Damn right John... only took me 6 months of frustrations and thinking to go...... FARK IT...JUST DO IT MYSELF!!!!

Love the pic there by the way.. not sure what team he bats with... but he's probably able to make a Snag!:becky:

You nailed it there, man, as is evidenced by that smile.:-D They look better than what the so called pros do. Love the look of both, but that chorizo is killer:thumb:. Gonna have to work on that smell-o-vision thing.

I'll be brining and smoking that when I get a few more hocks. Usually I do about 12 at a time.
