View Full Version : Took my new (and still) Ugly Drum Smoker on its maiden voyage

MRS_MRI has pics of the smoker on the big camera - probably post those ugly photos in the morning.

In general, I kind of had a hard time keeping the temps down. It seemed to want to stay at 275 - 300.

I assume the biggest issue was having the cover open so often because of different meats.

I did a bacon wrapped fatty, rack of spares and pig candy.

The food looked great, how was it compared to WSM fare?

I love seeing MRI_Boy and MRI_Girl munch on Q.

When MRS_MRI lets me download them - I'll post them. After all, the big camera is HERS.........

As far as the ribs - they cooked much faster on the UDS than my WSM. I normally plan on 5 hours for spares on the WSM.

Today on the UDS, they were finished in about 3 1/2 hours.

In time, I think that I will get to be 'pretty good' at this cooking thing.

somebody from minny should take an axe to that thing, but its my understanding they dont have one any more. pretty sharp, you could really doll it up for your neighbors to the west and put a Coyote on that bad boy.:laugh:

The MRS got me thinking about that. Folks often leave their hot grills near their vehicles and let the coals burn out during the game in the parking lot we use.

Once or twice a year - we hear about some of those grills walking off. I guess when you get 80,000 of your closest friends together and fill their bellies with beer, I guess chit happens.

I figure that I can just make it a bit of a pain in their arse to take my UDS if nothing else.

Nice looking drum there!:thumb: If you are opening (you probably already know) shut down your air about 10 mins before lifting the lid. I have discovered that if I put my meat in before you hit target temp and ease down on the air to let it stick at your target temp instead of hitting your temp and then shutting the air down and loading it, it seems to be a lot smoother in temp control.

Was the red paint a "high temperature" paint?
Is the sign metal and did you put some type of a spacer between the sign and the drum?

The white 'primer' and red 'finishing' coats of paint are high temp engine block paint.

I bheated the drum after painting to 400F for an hour or so empty, then did a short cook last night. It is ready for this weekend's tailgate party.

The sign is metal. It is held on with 1 inch stainless bolts with 2 nuts used as 'spacers' to keep it off of the barrel. A 3rd nut probably would have been better - but who wants to be labeled as a freak.

I plan on using a metal sign as well. Thanks for the idea of using spacer bolts! Your drum looks great. Have fun with it!

Good looking ugly drum, wait thats an oxymoron I think. As mentioned by Lionhrt try shutting down before reaching temp, I never bother shutting down the intakes but I am in and out fast so it does not spike much. 275 is not a bad cooking temp, but it would be nice to be able to control it if you want to cook at lower temps. The fire basket looks way big hope you are not filling it, that would send temp way up there and make it harder to control, I would say a little less than half that would do. Enjoy.

I bought a couple of stainless steel hose clamps to attach the basket to the grate.

My second cook on the UDS was a bit better. Using tips from this thread and the UDS Super Thread - things are improving.

I hope that the birds and ABTs turn out good tomorrow.........Heck - who am I kidding. I don't really care about the food that much - I just want to see people's reaction when they see this UDS in action.

Not everyone at Ohio State is a villain... ok but really I had an unlocked weber smokey joe style grill walk away my sophomore year while it was still hot!!!

So now my grills are tied up with heavy duty steel from the tractor supply store.

Not that craigslist charged me much for my Weber OTG, but I'd still be quite bereft if I lost her.

Again, nice job with the smoker.

It's stainless - my neodymium shimming pieces won't stick to it (MRI_Guy mod)
