here is what i did...

these are nature well angus chuck roasts that weigh about 2.5 lbs. a piece. i plan on cooking it to 160 internal then i'm going to pull them off and put them into a dutch oven and add 1/3 cup maple syrup and 2/3 cup water into it and return it to the egg until it is about 215 internal.

i put the bacon on the bottom of the dutch oven before adding the roasts and the liquid.

then pull the beef.

seasoned and sauced a bit and returned to the egg uncovered for an hour.
