View Full Version : First Cook on the UDS

At last the UDS is ready for her maiden voyage. I got started at 6:00 AM on Sat. After enough coffee to be able to function, I got the Charcoal basket loaded and lit with 12 lit briquettes. Prepped the butts while waiting for the UDS to get to temp. I just used some Legg's Sausage Seasoning and coarse black pepper.

I got the meat on at 8:15 at about 235 degrees. The UDS did great for the 1st 7 hrs then the rains came and we were out in the open. I had to keep fooling with the intakes most of the rest of the afternoon and evening since the rain kept coming and going but the UDS hung in there. About 4pm I fired up the 940 CB for some ABT's, Smoked sausage and Brats. We used a little different take on the ABT's. I stuffed them with cooked ground beef cooked with Taco seasoning and 5-blend Mexican cheese then topped with salsa but no bacon. Yummy so I was told.

Butts had stalled at 168 at about 4:40 and didn't seem to want to move.
Finally got to 183 at around 8 pm so I went ahead and foiled and coolered them. Left them in the cooler for about 1 hr then pulled. They were very good. I guess I could say they were the best I have ever done on a UDS since they were the first.

Oh, BTW, Here's some pron of my new UDS which I think I'll re-name my Not-So-Ugly Drum Smoker.

You may have noticed I used the old Weber lid doner for a table. Also lift off the plywood and srart the chimney on the old grate.

keep cooking on it, it only gets better!
oh ya....... i think almost anything stuffed into a jalapeņo would be good.

Looks really good man! I would have to agree that anything stuffed in a japaleno would be great!

donor weber for a table...brilliant...I've been trying to figure out what to do for a table, and what to do with my donor kettle grill... :idea:

I forgot to take pics of the sausage when they got done but they turned out good.
