Anbody got a good al pastor recipe I got two butts I want to do something different with and I am craving Mexican

I have been interested in trying them myself, I'll be curious to see the replies. I did a quick google search and found this recipe from a blog that looked pretty good. It could be adapted and simplified and used as a starting point:

MMMM my favorite tacos! Think I am gonna have to get some for dinner now! Those tacos are the number 3 reason for the move here aside from the Wife and Kid! lol

I've been looking for a good al pastor seasoning/marinade recipe for this for a long time, and both appear to be right on. If you want it really authentic, you could slice the butt very thin, and then pound the slices out and after marinating, thread them gryos style on a rotisserie and cook till done. That's about as close as you'll get to having the meat from a spit, but it's pretty much the same principle...OK, now I need to try this!

I do consider myself "un amo de cocinar mexicano" (a master of Mexican cooking) and this recipe is very close to what I do.

Just be careful how long you marinate the pork in the sauce. The enzymes in pineapple will turn pork into mush within a couple of hours so stick with the half hour that is recommended.
