View Full Version : Guinness Beer Can Chickens Pron

I know what all you physicists are going to say, the beer doesn't add any flavor, it doesn't get hot enough to steam the chicken, blah blah blah. But I still like playing around with beer can chickens.
I have a dual beer can chicken holder, but it only holds narrow cans for some reason. Then I had an idea, Guinness Beer Can Chicken!

I had forgotten about the "widget" in Guinness draft cans. It is a plastic device that sends nitrogen into the beer when you pop the top. I had to widen the opening of the cans enough to pop the widget out, then I heated the beer up to a boil before pouring half a beer in each can.

On the WSM, water pan removed so it's basically a UDS now. Plugged the top of the chickens with a shallot to hold the steam in. Ployboys Yardbird for the rub. Kept temps between 310 and 325.

Pulled after about 90 minutes. Chicken was just crazy moist and full of flavor. Wifey and I ate all the legs, wings and thighs and the breast meat will go towards smokey chicken salad. I don't care what all you beer can chicken poo-pooers think, I still love making and eating it!

great looking birds, i dont care what anybody says bcc is alot more tender and moist , i dont drink beer and can taste it in chicken ,jmho

Great idea boiling the beer, I will have to try that. I swear by beer can chicken as well...

Once thing I notice when I was heating up the beer - it started producing a good amount of steam at about 170 degrees. I think this debunks the theory (if you don't preheat the beer) that beer can chicken doesn't produce steam. Six ounces of room temp or 40 degree beer sitting in a 300 degree environment is not going to take too long to reach ambient temp and start producing steam.

Beer contains alcohol, alcohol boils at 173 F, even if the remaining liquid never boils you still are steaming it with pure alcohol. Also I love your idea of plugging the chicken with a shallot. I always make foil hats for mine, but will try that next time.

That brings up an interesting theory. I wonder if using beer IS an advantage over water in that you will begin developing steam at a lower temperature? Especially for people who don't heat the beer beforehand.

I actually tried that! But the rim of the top of a Guinness can is not like a regular can, it's rounded. I couldn't get the blade of the opener to make contact and gave up. Ended up using a pair of dikes to just cut the opening larger.
