Im gonna use the 3-2-1 method for the 1st time but im just wondering do I need a water pan???Ive heard to build the fire on one side of the grill and have a water pan on the side you cook over??

It's just a regular rectangle charcoal grill but im using apple wood chips with the coal.

Cool. Yeah, I'd do an indirect heat around 225* - 250* I'd also do a 3-1-1 instead of a 3-2-1. A little less time in the foil will give you a better texture - IMHO.

Lay down about 15 unlit coals and then put about 10 in a chimney to get those lit. Put the lit ones on top of the unlit and set your water pan next to the coals.

You can also put some foil over the grate directly over the coals to help direct the heat a little better.

Also, soak yer chips for about 30-45 minutes, wrap 'em in HD foil and poke some holes in the top with a fork. Put the chip packet directly on the coals. You'll use a lot fewer chips and your temps won't fluctuate as much.

I would definitely NOT go longer than 1 hour in foil. I just did some spares and foiled for about 1 hr 20 mintues and they were completely falling off the bone. I could barely get them back on the grate just to firm them up a bit.

I usually don't foil, and now I'm thinking about never foiling again. If I do, it will only be for about 1 hour at the most.

I never use a water pan but do spray the ribs with Apple Juice about every 20 minutes. Quickly so not to lose heat. I also spray real good with AJ when I foil them.

I put apple juice in the foil.

I brush mine with a little mop sauce just prior to foiling.
