INSPIRED BY ROSS & NORCOREDNECK!! These 2 guys posted threads that made me droolll Did my own interpertation...Cuban style...Did my research and came up with this...Bought some Flap meat from Costco...

Sweet Peppers, Onions, Garlic...seasoned w/ same spices...
Diced ones were sauteed and heaviliy seasoned, for Sa`zon, my new word...its like their version of Mierpoix. This was added to my Frijoles Negros, my 2nd new word!:-P

What a great meal!
My overall thoughts? I need to work on Mojo marinade, good but a little weak, and a longer soak time. Frijoles Negros? Good stuff, over long grain rice...
