View Full Version : Fired up the rig tonight...

I was just going go do a coil of sweet sausage and I was debating on whether or not to use the big pit-well it won so I figured I'd run to the store to load it partially to make it a little more worth the work. Right now I have 3 chickens-2 vadalia onions with bacon, 2 lobsters for lobster sandwiches- a breakfast fatty and a baked potato on. I'll post pics as I get'em off! Smells great with the bovine and yardbird with some oak and hickory for fuel. Wheeee!

I got a new rig coming in tomorow and I am going to fire it up just for chits and giggles

The lobster was boiled on the firebox and sauted in garlic and butter. The Italian steak roll was toasted and buttered. MMMM!

The 3 small chickens all pulled. I forgot to get the shot before pulling. Just take my word for it they were better looking than the grocery store rotisserie ones!

I pealed the 2 outer layers and sliced them nearly all the way through 4 times to allow them to open into a blossom as they cooked, I dusted them with yardbird and laid a piece of bacon over each of them.

They came out tasty but not like I had planned. I forgot to snap a picture of them before I shredded them and put them with all the left over bacon in the fridge. I'm going to saute them tomorrow with some peppers to go with the sweet sausage. I'm going to reheat the sausages on the grill indirect. Not my prefered way to do it all but then again it was fun to cook a bunch of stuff. It's hard for me to load this thing though. I didnt even fill the bottom rack on her tonight!!

No pretty presentation for this fatty. Damn thing broke in 2 when I was picking it up. It's 1 lb of regular sausage wrapped around scrambled egg, italian seasonings, moz, and a roma tomato diced. Finish with a bacon wrap and dust with bovine bold. cook at 275 for 1 hour sauce and let rest.

My midnight snack. I tasted a few things but this is all mine! Nothing like the taste of a fire roasted spud with butter! I'll crumble some bacon and a scoop of sour cream but really butter is all it really needs!
