wessb's chicken cordon bleu

better known as my half-assed attempt. wess probably knows me well enough to appreciate that. basically, i "planned" it out, but nothing ever goes as planned....

got "everything" from the store.

came home. no "meat pounder", or whatever they are really called. enter rubber mallet.

didn't have parm-reg. cheese, so i got parm and romano. forgot the swiss. didn't have mozzarella at home, so i went with what i had, provolone.

smashed chicken. worked out well. spread honey mustard. this stuff was more like honey than mustard. put boar's head ham on one and boar's head prosciutto on the other. a blend of the parm and the romano and "thick" slices of provolone.

i rolled in straight beat eggs (not sure what a wash is and i was moving too fast to look it up) and panko mixed with salt and dizzy pig shakin the tree.

cooked them at about 375 to 170 internal.

next time, i'll have thin sliced cheese and a marinade and time to marinate it.

that said, it was still delicious and the missus wants it on rotation.
