Made the BGE jealous again by cooking on the weber...wanted a 2 stage fire for searing / roasting....
I butterflied the loin and brined it for 90 minutes.... then made a fresh garden herb 'pesto' with fresh cilantro, thyme, basil, and parsley just picked.. with lemon juice and evoo in the food processer with some kosher salt and fresh cracked pepper.
i rolled the loin and trussed it up...
