Picked up a 5 pound eye of round Sunday. I planned on cooking it like a small brisket till I did a quick search of the forums. Ended up cooking it at 325-350 to about 135 internal. Used a coarse salt and pepper rub I'd made up for brisket. Sliced it thin and served it on hoagie buns.

I was wondering if anyone has cooked one to around 195 on a drum? I was looking for something a little more tender, but didn't want to dry it out.

Due to the low fat content, you would not want to cook that cut of meat to 195 - it would be inedible and tougher than shoe leather.
