hi every 1, new here most of the time i just read post .
tomorrow I'm smoking 3 slabs baby back ribs and 3 whole chickens for a b-day party for my son and a bunch of hot dogs . and after looking at all the meat i don't think i have enough food for 30 people so i found a 3lbs center cut pork loin in the deep freezer so I'm going to put it on the offset tomorrow i know a lot of you guys have smoked a loin any suggestions

Loins are very easy to cook. Very forgiving and very fast. I've done quite a few and they always come out moist and tender. Give it a good rub, toss into the smoker and cook until it hits 165*, if youre pulling it, 175*. Ive done 3 pounders in about 4-5 hrs, which I think is pretty quick given the thickness. Just keep an eye on it that last hour or so. If it gets too over cooked it will come out spongy.

I love doing loins, do mine on the UDS or offset until internal temp is 145 then I pull and wrap til ready to eat..
