After picking up some great looking produce and bacon at the local farmer's market on Wednesday and some inspiring posts from Derek and Landarc, I decided to go Southern and make both a Succotash casserole and a yellow squash casserole. I thought I would share the highlights of the night.
Started by lightly grilling the veggies to get some char and smoke on them

Veggies prepped and chopped including par steamed favas, fresh peas, quick charred white and yellow corn, roasted peppers, charred
pearl onions and leeks

Fried bacon and made gravy out of the drippings

Succotash veggies put into a cazuela

Veggies topped with bacon gravy and a 2:1 mixture of panko and parmesan that were coated in melted butter.
In the small cazuela is grilled yellow squash covered with a mixture of 1 egg, 6 crumbled ritz crackers, roasted pearl onions, 1/2 cup milk, 1/2 cup cheddar jack and salt and pepper. This was covered with the same panko cheese mixture.

Both dishes tasted great. Landarc, my wife says you are invited over for dessert tonight for homemade lemon poundcake with fresh blackberry topping. And she says you can draft the blueprints for our dinner any time. :thumb:
