View Full Version : Getting ready for a Graduation Party (w/ pron)

Howdy,

Am very new here so a little about myself. I'm a "back yard / driveway" smoker looking to learn how to really smoke some good Q.

Anyways, as everyone in my close and extended family already loves what comes out of my smokers, I was asked to smoke up the proteins for a graduation party for 2 of my cousins this coming Sunday.

Guest count is approx. 125. Menu will be pulled pork, St. Louis Spares, grilled chicken of some fashion, and a whole bunch of sides.

Started today with 80 #'s of Boston Butt, which will be followed by a couples of rounds of spare ribs.

Looks great! Good luck with the cook and party this weekend. If you're looking to up your smoking capacity, let me suggest three simple letters UDS. Search for it (UDS) in the google bar at the bottom of the page.

Kroger didn't have the Butt's on sale here in Louisville (that or I just missed it). But, I did manage to find some $3 off packaged pork coupons, so that made it more tolerable. :)

Paul, I've been amazed by the UDS's that I have seen since coming here, BUT, myself and a couple of cousins are dreaming a bit bigger. Shooting for a trailer mounted rotisserie smoker, with a verticle rib box and a nice big grill to boot :)

Might have to give the UDS a shot in the interim though :)

Gotta love variable size and weight and temps. Butt's went in at 7:30 last night. Just pulled 5 of them out as they were falling apart. Foil wrapped and into the cooler they go. The other 4 need some more time as it's only been 15.5 hours.

Question about that. Do you wrap each one in a towel ? Or just line the cooler with one ?

On a kind of side note, I really have to thank you kind people here at the Brethern. I *used* to think "lo and slo" on a Butt meant 8 hours :)

Hit the stall last night at about the 5-6 hr mark around 2:00 am or so. Didn't freak out or yank anything this time. Decided instead to place my faith in what I have read here. Brilliant move on my part :)

Will post pre and post shredding pics when the time comes.

Lay the butts in the cooler with towels on top. Shut it tight for an hour or so.

I like the way you think. A buddy of mine and I keep having delusions of grandeur about putting together a trailer and doing some competitions. Right now we're fine tuning our recipes and making sure we can cook first, then maybe sometime down the road we'll get to the trailer.

I can't say enough good things about my UDS experience thus far, it's provided me with a very functional smoker for under $100, now that's a slickdeal....opps wrong forum. :-D
